Black-Eyed Peas with Sausages


  • 1 pound dried black-eyed peas
  • 1 pound link sausage
  • 1 onion chopped
  • 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • 1 cup barbecue sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons Bacon grease


  • Rinse, prepare, soak, and cook peas in about 3 cups water, following directions on the package. Drain and reserve half of the cooking liquid. Brown sausage in skillet over medium heat. Add onions and drain off excess fat. Place peas in a 3-quart casserole and add sausage and onions. Stir in reserved liquid, mustard, salt barbeque sauce, sugar and bacon grease. Bake at 310° for 1 to 1.5 hours.
