  • 3 slices fresh ginger
  • 2 scallions
  • 1 small canned bamboo shoot
  • 2 slices of sandwich ham
  • 2 tablespoons bacon grease
  • 1 teaspoon salt
  • 1 large fresh Red Snapper scaled and cleaned
  • 3 to 4 large Shiitake mushrooms
  • 1 tablespoon sherry


  • Soak mushrooms in hot water for 20 minutes. Drain and save 1 tablespoon of the liquid. Remove stem and cut into shreds. Cut slashes on 45 angles on fish at 1 inch intervals on both sides. Rub fish with salt inside and out. Cut ham, bamboo shoot, scallions and ginger into fine shreds. Place fish on steamer plate. Spread mushrooms, bamboo shoot, scallion, ginger and ham shreds over fish. Mix sherry with 1 tablespoon mushroom liquid, melted bacon grease and pour over fish. Steam fish for 10 minutes or until flaky. Garnish with Cilantro.
