Pan Fried Catfish with Hush Puppies

Ingredients

  • 3/4 cup vegetable oil
  • 6 catfish fillets approximately 8 oz each
  • 1 onion finely chopped
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup bacon grease
  • 1 cup cornmeal

Instructions

  • Combine cornmeal, salt and pepper on a plate. Heat bacon grease and oil in large skillet. Dredge fish in mixture and lay in pan. Mix leftover cornmeal in a bowl with onions, flour, baking powder and milk. Stir until thick. Add hushpuppy mixture by the spoonful to the pan. Allow the hushpuppies and fish to cook together. Cook until brown.
