Corn Bread Croutons

  • 3 scallions diced
  • 1/4 cup unsalted butter melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup all-purpose flour
  • 1 1/2 cups yellow cornmeal
  • 1/4 cup bacon grease


  • Preheat oven to 450°Heat bacon grease in large skillet in oven for 5 minutes. Mix cornmeal, flour, baking powder, and salt in a bowl. Mix egg, milk in a bowl, then add in all dry ingredients. Add butter and scallions to skillet and sauté. Add scallion mix into batter. Pour batter into skillet and bake for 10 minutes. Remove cornbread onto cooling rack for 15 minutes. Cut into 3/4-inch cubes and spread evenly on one layer in a shallow backing pan. Bake for 10 minutes then remove and cool. Great on salads and soups!
