  • salt and pepper to taste
  • 1/4 cup cheese of your choice
  • 1 small onion minced
  • 1 small bell pepper diced
  • 1/2 cup diced cooked ham
  • 2 tablespoons bacon grease
  • 6 Eggs


  • Beat eggs. Heat bacon grease in medium skillter and add ham, bell peppers, onions and saute until onions are golden brown. Mix in eggs and cook until light brown and then flip over. Add cheese on top of eggs and cook 2-3 minutes more or until golden brown on bottom. Roll or fold into omelette and serve hot. Great with Hash Brown Potatoes skillet fried in Bacon grease.
  • Salt and pepper to taste.
